Ingredients (Serves 2)
FOR THE PRAWNS:
◦ 200 g raw king prawns, peeled and deveined
◦ 25 g unsalted butter
◦ 2 tbsp Goldfish Brand Japanese Katsu Style Curry Sauce Concentrate
FOR THE PANINI:
◦ 1 grilled panini
◦ 3 tbsp Goldfish Brand Curry Dip Condiment
◦ A handful fresh coriander leaves
◦ A handful fresh basil leaves
◦ 1 small red chilli, thinly sliced (seeds in or out to taste)
◦ Juice of ½ lime
TO SERVE (OPTIONAL):
◦ Lime wedges
◦ Extra chilli slices
◦ A side salad or handful of crisp lettuce
METHOD
1. PREP YOUR PANINI STATION
Slice your bread and line up the Curry Dip Condiment, your fresh herbs, sliced chilli and lime. Having everything within reach means you can assemble quickly once the prawns are cooked.
2. PAN-FRY THE PRAWNS
1. Blend the butter: Mix your butter with the Katsu Curry concentrate in a bowl until smooth.
2. Heat the butter: In a non-stick frying pan over medium heat, melt the butter until it foams
and just starts to brown at the edges.
3. Add prawns: Add the prawns to the pan in a single layer. Cook for 1 minute on the first
side - listen for that satisfying sizzle.
4. Finish cooking: Flip the prawns and continue to cook for another 1–2 minutes, or until the prawns turn opaque and the sauce has thickened slightly. Remove from the heat and set aside to cool just enough for handling.
Chef’s Tip: Don’t over-crowd the pan; if necessary, cook the prawns in two batches so they brown rather than steam!
3. ASSEMBLE THE PANINI
1. Spread the base: Cut the panini in two and spread each slice generously with 1–2 tbsp

2. Layer the prawns: Distribute the curried prawns evenly over the condiment-slathered
bread.
3. Add the aromatics: Top each with fresh coriander and basil, followed by sliced chilli.
Squeeze over half the lime juice.
4. Close the sandwich, and cut in half. Serve with lime wedges for extra zing and a side salad or handful of lettuce for crunch.
